Bottle age is the maturation a wine undergoes in the sealed bottle after release, as opposed to the élevage it received before bottling. In the near-absence of oxygen, aromas slowly transform from primary fruit to tertiary complexity, tannins soften and integrate, and colours shift. Bottle age is reductive and gradual; it rewards structured wines and ruins fragile ones. It is the phase collectors most prize.

Bottle age cannot be rushed and is easily wasted by poor storage. A wine with genuine bottle age, well kept, offers flavours unobtainable in youth — the central reason cellars exist.
