Production encompasses the whole process of making wine, from harvesting and crushing through fermentation, élevage, blending and bottling, as well as the quantity made. Production methods — choices of vessel, yeast, oak, extraction and intervention — define style and quality. Production volume also matters to collectors: small production often means scarcity and higher prices, while large production signals availability and, usually, consistency.
