Tannins are phenolic compounds found in grape skins, seeds, and stems that create the drying, astringent sensation in the mouth—the feeling that your mouth is puckering or sticking. Tannins are essential to red-wine structure: they preserve colour, enable long aging, and provide framework for flavour complexity. Young wines often taste tannic and harsh; with age, tannins soften and polymerise, becoming silkier and more integrated. Tannin ripeness—when seed tannins have softened and polyphenols have matured—is as important as grape ripeness. High-quality wines typically show balanced, ripe tannins rather than harsh, aggressive ones.

Tannin structure determines ageing potential and drinking window. Young wines with ripe, well-integrated tannins are more approachable but still age beautifully; harsh-tannic wines may never fully integrate.

  • Dry, grippy sensation on gums and tongue — like strong black tea or unripe persimmon.
  • Fine-grained tannins feel silky; coarse ones feel chalky or astringent.
  • With age, harsh youth tannin often softens into a smoother frame.
Examples
  • Young Cabernet Sauvignon, Nebbiolo, and Tannat are textbook high-tannin reds.
  • Pinot Noir and Gamay usually show lower tannin and earlier drinkability.
  • White wines are low in grape tannin unless extended skin contact (e.g. orange wine).

  • High-tannin, high-acid reds are the classic candidates for long cellaring.
