How much Champagne do I need for a NYE party?

Budget one glass per person for the midnight toast (roughly one bottle for every six guests), plus however much they will drink over the evening — typically a bottle per two or three people for a party, or one per person for a sit-down dinner.

What is the difference between Champagne and Prosecco for NYE?

Champagne is made by second fermentation in the bottle (méthode champenoise), which produces finer, more persistent bubbles and a toasty, complex flavour. Prosecco uses the tank method, making it fruitier, lighter, and less expensive. For a large party, stock mostly Prosecco and keep a case of good Champagne for the toast.
