New Year's Eve practically mandates bubbles, but the best approach goes beyond a single bottle of Champagne. Whether you are hosting a party, a quiet dinner for two, or a multi-course meal, the right selection spans the aperitif, the centrepiece dish, and the midnight toast. Below are the styles that carry a celebration from pre-dinner drinks to the countdown.
Our sommelier's picks
Midnight Toast
7–9°CFor the midnight moment, nothing else comes close — the finest bubbles, the toasty complexity, the weight of occasion. Opt for a Brut NV from a quality house for a crowd, or a vintage Champagne for a small gathering.
The universal aperitif and the only wine for a midnight toast.
Party Sparkler
7–9°CA Prosecco Superiore DOCG is the practical backbone of any NYE party — light, crisp, and endlessly drinkable, it serves a crowd without demanding attention. Buy two bottles where you would buy one Champagne.
Ideal with canapés, cured meats, and anything passing on a tray.
Grand Red
17–19°CFor a sit-down NYE dinner, a mature Barolo is the kind of wine people remember — it has the authority to anchor a celebratory meal without being a show-off. Decant for at least two hours before serving.
Outstanding with truffle pasta, beef tenderloin, or braised short ribs.
Elegant White
10–12°CA Meursault or Puligny-Montrachet brings the texture and depth to anchor a seafood course or a rich pasta — a white wine with the authority to hold its own at a formal dinner table.
Perfect with lobster bisque, scallops, or a decadent pasta in cream sauce.
Celebratory Off-Dry
9–11°CA Spätlese from the Mosel — with its electric acidity, petrol minerality, and floral sweetness — is an unexpected crowd-pleaser for NYE. It pairs with almost everything on the table and ages beautifully.
Wonderful with Asian-inspired canapés, charcuterie, and smoked fish.

How much Champagne do I need for a NYE party?
Budget one glass per person for the midnight toast (roughly one bottle for every six guests), plus however much they will drink over the evening — typically a bottle per two or three people for a party, or one per person for a sit-down dinner.
What is the difference between Champagne and Prosecco for NYE?
Champagne is made by second fermentation in the bottle (méthode champenoise), which produces finer, more persistent bubbles and a toasty, complex flavour. Prosecco uses the tank method, making it fruitier, lighter, and less expensive. For a large party, stock mostly Prosecco and keep a case of good Champagne for the toast.
What wine pairs with NYE appetisers and canapés?
Light, high-acid sparkling wines are ideal — Champagne, Cava, and Prosecco all work. If you want still wine, a crisp Sancerre (Sauvignon Blanc from the Loire) or an Albariño from Rías Baixas handles salty, savoury bites beautifully.
