Soave is a Veneto white region near Verona, built on the Garganega grape (with some Trebbiano di Soave). Long associated with cheap bulk wine, top Soave — especially from the volcanic hills of Soave Classico — is subtle and mineral, offering pear, white peach, almond and white flowers with a saline, savoury depth. Restrained and food-friendly, it is one of Italy's most underrated whites.

Structure

BodyGarganega on volcanic basalt gives Soave its minerality and signature bitter-almond finish. Hillside Classico and single-vineyard wines reward a second look and can age, while flatland bulk wine remains simple. The sweet Recioto di Soave is a botrytis-free dried-grape dessert wine.
