Furmint is Hungary's noble white, the grape behind the legendary sweet wines of Tokaj. High in acidity and prone to noble rot, it makes both the honeyed, apricot-laden Tokaji Aszú and, increasingly, taut, mineral dry whites of green apple, pear, smoke and a stony, almost saline intensity. Few grapes balance richness and racing acidity so dramatically, and it ages superbly.

Structure

BodyOn the volcanic soils of Tokaj, Furmint's high acidity preserves freshness in even the sweetest wines. Botrytis concentrates its sugars for Aszú; dry styles are mineral and ageworthy. A late-ripening grape of real structure, it is a rising star in modern dry winemaking.
