Garganega is the grape behind Soave, one of northern Italy's most underrated whites. At its best, on the volcanic hills of Soave Classico, it gives subtle, mineral wines of pear, white peach, almond and white flowers, with gentle acidity and a savoury, saline depth. Long tarred by cheap, dilute bulk versions, top Garganega rewards a second look — and ages gracefully.

Structure

BodyLate-ripening and high-yielding, Garganega needs hillside sites and restrained yields to shine. Volcanic basalt soils give minerality and texture; the grape's signature bitter-almond note lingers on the finish. It is also used for the sweet Recioto di Soave.
