Extraction is the drawing of color, tannin and flavour compounds from grape skins, seeds and stems into the wine during and after fermentation. Winemakers control it through maceration time, temperature, and physical techniques like punch-downs and pump-overs. Gentle extraction yields elegant, lighter wines; aggressive or prolonged extraction gives deep color, firm tannin and power. Over-extraction produces harsh, hollow wines.

Extraction reflects intent: restrained handling suits delicate grapes and elegant styles, while bigger wines need more. The skill is extracting ripe, fine tannin without harshness — a key difference between balanced and clumsy reds.
