Finish (or aftertaste) is the flavour and sensations that linger in the mouth and throat after swallowing wine. A long finish—lasting 20+ seconds—indicates complexity and quality. Short finishes suggest simpler wines. Finish character reveals wine structure: tannins create a drying finish; acidity adds brightness; alcohol adds warmth. The finish often reveals subtle flavours not apparent on the palate. Quality wines show persistent, complex finishes; poor wines fade quickly or leave harsh, unpleasant sensations.
