Preservation covers the techniques and substances that protect wine from spoilage and premature oxidation, both during winemaking and after a bottle is opened. Sulfur dioxide is the chief winemaking preservative; acidity, alcohol, tannin and sugar also preserve naturally. For opened bottles, refrigeration, inert gas and vacuum stoppers slow deterioration. Good preservation maintains a wine's freshness and aging trajectory.
WHY IT MATTERS FOR COLLECTORS
Preservation is why some wines last decades and others fade fast. For collectors, the practical side is storage and serving: keep bottles cool, dark and still, and use gas or vacuum tools to extend an opened wine.
