Riddling (remuage in French) is the champagne-production step where bottles are gradually tilted and turned to move sediment (dead yeast) toward the bottle neck before disgorgement. Traditional riddling is labour-intensive, with workers manually moving bottles daily in large racks (pupitres). Modern producers use mechanical riddlers (gyropalettes) to automate the process. Riddling must be done carefully to avoid disturbing sediment prematurely. The process typically takes 3–6 weeks and is critical for achieving champagne clarity.
