Sherry is fortified wine from Spain's Andalusia region, traditionally produced using the solera system. Sherry ranges from bone-dry (Fino, Amontillado) to sweet (Cream, Pedro Ximénez). Fino sherries are fresh, pale, and delicate; Amontillado sherries are darker, more complex; Oloroso sherries are rich and oxidative.
