Fino is the palest, driest and most delicate style of Sherry, aged biologically under a protective film of flor yeast that shields the wine from oxygen and gives it a saline, tangy, almond-and-bread character. Made from Palomino grapes in Jerez, it is fortified to a relatively low strength so flor can survive. Served chilled and fresh, it is a classic aperitif and a brilliant food wine.

Fino is best drunk young and fresh, ideally from a recently opened bottle, as flor character fades with air. Manzanilla is a related coastal style. Both are among wine's great underpriced pleasures.
