Ice wine (or Eiswein in German) is made from grapes harvested while frozen on the vine, naturally concentrating sugars through water crystallization. As ice forms, water freezes but sugars remain liquid, allowing the juice to be pressed at very high sugar concentrations. The result is intensely sweet wine with remarkable complexity and acidity balance. Ice wine is produced primarily in cold regions (Canada, Germany, Austria). The production method is labour-intensive and risky (requiring freezing weather), making ice wine expensive. Quality ice wines age beautifully.

Premium ice wines show exceptional sweetness and complexity at premium prices. These are luxury dessert wines with excellent aging potential, though usually consumed for their current complexity.
