Pump over (or remontage) is a red-wine fermentation management technique in which juice is pumped from the bottom of the tank and sprayed over the floating cap of grape solids multiple times daily. This re-wets the cap, maintains temperature uniformity, and extracts colour and tannin without the labour of punch-down. Pump overs are gentler than punch-downs and suited to large-scale production. They provide less precise control than punch-down but are faster and allow subtle variations in frequency and intensity to fine-tune the extraction profile.
